Curator's Notes: Giving panettone is not a simple act of kindness but a gesture rich in history and tradition. Panettone rose to prominence sometime during the late 18th to early-19th centuries, when, in keeping with Milan’s reputation as a moneyed enclave, pastry shops catered to the city’s affluent. Giving Antise panettone is a gesture of history, tradition, and good taste.
To speak on panettone, is to speak of the Antise Vancouver philosophy of balance. It is the result of a passionate 36 hours of pure craftsmanship upon a base of timeless research.
The feed of “lievito madre” (mother yeast) daily and each one of the 12 steps is executed with the utmost level of care and attention. Meticulous attention to detail guarantees the impeccable production of our masterpiece. Due to the lievito madre and the long, detailed, production method, our panettone can last up to 1 month at room temperature (even longer for our Limoncello Panettone), making it a perfect dessert to have around for any occasion, and especially as a Christmas gift.
How to Serve: Their panettone is best served at room temperature. The specific prolonged method of crafting allows it to be preserved for longer periods of time, so that immediate refrigeration is not required, diminishing the experience. Traditionally, panettone is best served with coffee, tea, or gelato (or ice cream). However, from our experience here in Vancouver, it also pairs very well with eggnog and dessert wines such as ice wines or passito (an Italian wine made from partially sundried grapes).
Ingredients: Soft wheat flour, natural yeast, butter, ghee butter, eggs yolks, granulated sugar, orange flavedo zest, cedro candied cubes, orange candied cubes, sun-dried raisins, Madagascar vanilla, malt extract, water, salt.
Shelf Life: Antise’s Panettone Classico has a prolonged shelf life of 31 days. It is recommended to store it in a plastic bag in a dark room like you would other kinds of bread. The panettone is best enjoyed as soon as possible of course, but will be almost equally delicious as time passes in any case.
