A phin is a traditional, compact Vietnamese metal filter that brews a single, slow-drip, intense cup of coffee, combining elements of French press and pour-over. It produces a bold, heavy-mouthfeel coffee often served with sweetened condensed milk.

Components: The device consists of a filter plate (sits on the cup), brewing chamber, press, and a lid to retain heat.

Steps for the Perfect Phin Brew

  • Prep: Warm your cup and the phin with hot water, then discard it.
  • Add Coffee: Add 2-3 heaping tablespoons of ground coffee into the filter chamber. Use a medium-coarse grind (similar to sea salt) to avoid clogging.
  • Level & Press: Gently tap the filter to level the grounds. Insert the presser and give the screw press a slight turn to secure it, but don't over-compress.
  • Bloom: Pour roughly 20-30ml of hot water over the press, then wait 30-60 seconds for the coffee to expand.
  • Brew: Fill the chamber with hot water to the top and place the lid on. Let it slowly drip (about 4-6 minutes).
  • Serve: Traditionally served over sweetened condensed milk for Cà phê sữa đá (iced milk coffee) or black (Cà phê đen).
